I must say, lamb is the soul of barbecue cuisine. I really enjoy eating grilled lamb chops, although I haven't been very good at making them for a long time. After numerous attempts, I finally found a better way to grill lamb chops, and I've documented it.

1. Coldwater in the pot, along with spring onion, ginger, garlic, star anise, Sichuan peppercorns, fragrant leaves, and salt. Once the water boils, reduce the heat and simmer for 30-40 minutes

2. About 10 minutes before finishing cooking the lamb chops, start preheating the oven to 210 degrees Celsius with both top and bottom heat modes. 3. Lift the lamb chops out of the pot and drain any excess water. Then, place them in a baking tray and put them in the oven at 210 degrees Celsius for 8-10 minutes.

4. While the lamb chops are roasting in the oven, you can start preparing the barbecue sauce. Pour some chili sauce into a bowl, add a bit of olive oil, and sprinkle with sea salt, black pepper, and cumin. Stir well 5. Remove the lamb chops from the oven and evenly brush them with the barbecue sauce prepared in the previous step. Then return them to the oven and roast at a temperature of 180-200 degrees Celsius for an additional 3-5 minutes.
